Crunchy coating · Creamy sauce
Let’s make it fancy.
Why you’ll love it
- Texture heaven: A crunchy, golden pretzel coating.
- Fast fancy: Thin chicken breasts keep cooking quick.
- Versatile: Pairs beautifully with roasted veggies or a crisp salad.
For the sauce
- 3 tablespoons stone-ground mustard
- ¾ cup white wine, or chicken broth
- ¾ cup heavy cream
For the chicken
- Chicken breast, pounded thin
- Flour, for dredging
- Eggs, beaten, for coating
- Crushed pretzels, for coating
- Seasonings to taste: paprika, salt, pepper, garlic, and bold poultry blend
- Oil, for pan-frying
Use enough flour, beaten egg, and crushed pretzels to coat your chicken. Season to taste, keeping the saltiness of the pretzels in mind.
Directions
- Make the sauce. Simmer the white wine and mustard in a saucepan until reduced. Stir in the heavy cream and simmer gently until the sauce coats the back of a spoon. Keep warm over low heat.
- Prep the chicken. Pound the chicken to an even, thin thickness. Season as you like. Set out separate shallow dishes of seasoned flour, beaten eggs, and crushed pretzels. Dredge the chicken in flour, dip in egg, then press into the crushed pretzels to coat.
- Cook. Pan-fry in hot oil until golden brown on both sides and cooked through. The thickest part of the chicken should reach 165°F (74°C) on a food thermometer. Reduce the heat if the coating browns too quickly.
- Plate. Cut the chicken in half and stack for height. Drizzle the mustard sauce over the top and around the plate. Serve right away for the best crunch.
Tips for extra fancy
- Use a ring mold to serve your side dishes neatly.
- Garnish with chopped parsley or microgreens.
- Swap white wine for chicken broth if desired.
Minimal fuss. Maximum flavor. That is how we fake it fancy.
