Chocolate Lava Cakes

My go-to dessert when I’m craving something sweet but don’t have time—or ingredients—for anything complicated. You probably already have everything you need in your pantry, and the result looks fancy enough for date night.

A short ingredient list, a rich chocolate center, and a little whipped cream make an impressive finish with minimal fuss.

Individual chocolate lava cake topped with pink raspberry whipped cream and plated with raspberry sauce

Bake: 10–12 minutes · Oven: 425°F

Let’s make it fancy.

Ingredients

  • ½ stick unsalted butter (4 tablespoons), plus extra for greasing if desired
  • 4 ounces chocolate of choice (Sandy uses Hershey’s Special Dark)
  • 2 large eggs
  • 2 egg yolks
  • ¼ cup sugar
  • ⅛ teaspoon salt
  • 2 tablespoons all-purpose flour
  • Cocoa powder, for dusting the ramekins
  • Nonstick spray, optional, for greasing

To serve, optional

  • Raspberry whipped cream

Yield and baking time depend on your ramekin size. Fill each about ¾ full and watch for set edges with a soft center.

Directions

  1. Prep. Preheat the oven to 425°F. Lightly grease oven-safe ramekins with butter or nonstick spray, then dust with cocoa powder.
  2. Melt. Microwave the butter and chocolate together in 30-second increments, stirring between each, until smooth. Let cool slightly.
  3. Whisk. In a separate bowl, whisk together the eggs, egg yolks, sugar, and salt.
  4. Combine. Gradually add the slightly cooled chocolate mixture to the eggs, whisking gently. Add it slowly so the warm chocolate does not scramble the eggs.
  5. Fold. Fold in the flour until just blended.
  6. Bake. Fill the ramekins about ¾ full. Bake for 10–12 minutes, adjusting for ramekin size. The edges should be set while the centers remain soft.
  7. Rest and loosen. Rest for 1 minute, then carefully run a knife around the edges.
  8. Unmold. Using oven mitts, place a plate over each ramekin and carefully invert. Wait another minute before lifting the hot ramekin away.
  9. Top and serve. Finish with raspberry whipped cream and serve warm.

Make it fancy

Sandy loves homemade raspberry whipped cream on top. Make it ahead and freeze for about an hour, until firm enough to scoop like ice cream.

Make ahead

You can freeze the unbaked cakes for a later chocolate craving. Frozen batter will need extra baking time; use the set edges and soft center as your guide. Follow your ramekin manufacturer’s temperature-change instructions to avoid thermal shock.

Minimal fuss. Maximum flavor. That is how we fake it fancy.
