Banana Bread Cobbler

This is one of my favorite easy desserts—simple ingredients, cozy flavor, and it looks way fancier than the effort it takes.

Ripe bananas and cinnamon bake into a golden, bubbly cobbler. Serve it warm with vanilla ice cream and a drizzle of caramel for a sweet finishing touch.

Bake: 40–45 minutes · Oven: 350°F · 9×9-inch dish

Let’s make it fancy.

Ingredients

  • 4 ripe bananas, mashed
  • 1 stick (½ cup) butter, melted
  • 1 cup sugar
  • 1 cup milk
  • 1 cup self-rising flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

No self-rising flour? Use 1 cup all-purpose flour plus 1½ teaspoons baking powder and a pinch of salt.

Optional toppings

  • Vanilla ice cream
  • Caramel drizzle
  • Whipped cream
  • Cinnamon sugar

Directions

  1. Prep. Preheat the oven to 350°F. Grease a 9×9-inch baking dish.
  2. Mix. In a bowl, mix the melted butter, sugar, milk, flour, vanilla, and cinnamon until smooth. If using the flour substitution, include the baking powder and salt.
  3. Pour. Pour the batter into the prepared dish.
  4. Add the bananas. Spoon the mashed bananas evenly over the top. Do not stir them into the batter.
  5. Bake. Bake for 40–45 minutes, until golden brown and bubbly.
  6. Serve. Serve warm with vanilla ice cream and a drizzle of caramel or a sprinkle of cinnamon sugar. Add whipped cream if desired.

Make it fancy

Spoon the cobbler into individual serving bowls and top just before serving, so the ice cream begins to melt into the warm cobbler.

Minimal fuss. Maximum flavor. That is how we fake it fancy.
